Flourless Peanut Butter Chocolate Chip Cookies

It's been a while since I've done any baking, which has as much to do with the heat wave we were engulfed in for much of the summer as it has to do with finding the time. However, the other day I came across a recipe for flourless peanut butter coconut chocolate chip cookies that I just couldn't resist. I've made a few minor variations to make these easy and gluten-free treats. I didn't miss the flour one bit. Very tasty and highly recommended.

Incredibly easy, delicious gluten-free flourless peanut butter cookies with chocolate chips

Ingredients:
  • 1 cup crunchy natural peanut butter
  • 1 cup white sugar
  • 1 egg
  • 1/4 teaspoon vanilla
  • 1/4 cup dried grated coconut
  • 1/4 cup milk or semi-sweet chocolate chips
Instructions:
  • Preheat an oven to 350° and grease or line a large baking sheet with parchment paper.

  • In a medium bowl, combine the peanut butter, sugar and the egg. Stir in the vanilla, coconut and chocolate chips. Transfer the dough onto the baking sheet in heaping tablespoon portions, leaving about an inch between each cookie. Bake for 12 to 14 minutes or until golden brown.

  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Makes about 16 cookies

  2. Thanks for dropping by Nandita. To be honest, I really don't know much about sugar substitutes, but probably it would work out well. What sort of sugar substitute did you have in mind?

  3. Now that I consider your question for two more minutes, I bet maple syrup would be an unique substitute for the sugar!

  6. Hi there Lisa, my gluten free friend came over for dinner on Saturday, so I made your cookies and they were fabulous! I didn't use the coconut, but did everything else as per your instructions. They were super-moist, tasty and so incredibly easy to make. We were all trying to fit a second one in, despite being full, as they were so delicious. Thank you.

  9. Lisa, I made these cookies over the weekend, to take to a friend's house. And I wanted to leave another comment, to again say thank you for posting this recipe. I've now made these cookies about 8 times. They've become my staple gift food recipe. And everyone loves them. It's a brilliant, brilliant recipe.
