I gladly shared the cooking duties over the holidays, but not wanting to spend all of my time in the kitchen, I sometimes made biscuits to fill out the meal. These olive oil biscuits are incredibly easy to make and pleased both vegetarians and carnivores alike. If desired, you can add a 1/2 cup of raisins or blueberries to the dough. Feel free to substitute a sharp Cheddar cheese for the Parmesan cheese.

These have made me feel really hungry. Think I better go and make dinner.
ReplyDeleteIt is delightful to see a biscuits recipe with olive oil instead of butter or shortening! I will have to try this soon.
ReplyDeletethese look so simple and so yummy - and no rolling out dough - I assume they would freeze ok so they could be taken out on a hot night and served with salad - they are on my list of to do!
ReplyDeleteI love that these are so easy to make. They would be great with soups, salads, or just on their own. Delicious!
ReplyDeleteI made these this week and have posted on them - with my comments on the linguistic differences - in australia and uk we would call these scone - but they taste great no matter what you call them
ReplyDeleteI've made these twice already and they turned out fantastic both times! Lisa, thanks so much for a healthier alternative to typical US biscuits. :)
ReplyDeleteHave never made bisuits like these before, & am very intrigued. They look fab Lisa!
ReplyDeleteMmm these sounds SO good!
ReplyDeleteI'm a new reader - found your blog when searching olive oil biscuit recipes. I made these for supper tonight and they were amazing! I added some fresh ground black pepper to the dough as well.
ReplyDeleteAlso coincidental that I was just in London for the very first time this past weekend. Lovely city!
Have you made a sweet version of this without cheese, perhaps for shortcake?? Would love to know how to alter... Going to try this adding a few tablespoons of sugar and no cheese.

You could use sugar instead of the fruit though I must say the fruit is truly a nice addition.
At any rate, I suppose you could make this recipe here and just leave out the cheese and add sugar as you suggest. Let me know how it all works out for you. Thanks for stopping by my blog.
