Cocoa Fruit Treats

Cocoa Fruit Treats

If you are craving a naturally sweet, easy-to-make healthy treat that you won't feel guilty indulging in, then you simply must make these fudgy little fruit and nut nibblers. Think fat, chocolatey fruit leather without artificial sweetener and with just a hint of spice. These delightful slices of bliss will keep for a week in a covered container in the refrigerator, but I dare you to resist gobbling them all up after a short chill. Serves as many as you feel generous enough to share with.

Ingredients:
  • 2/3 cup raw unsalted pistachios
  • 1 cup dried dates, pitted and chopped
  • 1/4 cup dried unsweetened prunes, chopped
  • 1/3 cup dried unsweetened cranberries
  • 2 heaping tablespoons cocoa powder or carob powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon dried red chili flakes
Instructions:
  • In a food processor, pulse together the pistachios, dates, prunes, cranberries and cocoa until you have a coarse meal. Add the vanilla and red chili flakes, and process until the mixture forms into thick ball of dough.

  • Turn the mixture out onto a piece of plastic wrap and, using your hands, shape into a roughly 8-inch log. Cover with plastic wrap, roll the log a few times to compress, and chill for a few hours or longer. Cut into 1/2-inch slices to serve.

Lisa, these look amazing!! I often add chili flakes but have never done these with so many fruits--and I LOVE the addition of pistachios! Now I'm going to be making your version next time... !

These look so great! I just made my own granola bars for the first time and I was thinking of making something with just fruit & nut (like a Lara bar). Love the cocoa in these. Have you ever had that Ficoco spread? It's one of my favorite things ever.

Elly, haven't had that Ficoco spread. Care to share?

I get Ficoco at Whole Foods, but I'm sure they have it at other places. The ingredients are basically dried figs, cocoa powder and cane sugar. No doubt easy enough to make on your own (and I might try next time) and so much better than plain ol' jam.

Wow, these are excellent. This is the kind of food we want our children to be eating. Healthy and nutritious, naturally sweetened. Thank you Lisa for submitting this to our event.

I loved these Lisa! they look so good! but don't you need any binding agent like eggs or milk to make the dough? how will it come together? just by the dried fruits?

Lisa Turner said...

Mansi, you don't need any binding agent at all. I used moist dried fruit and they came together perfectly. Very easy to make, and very had to resist.
