Bold and tart but appealingly sweet and refreshing salad dressing

Ingredients:
- juice from 2 large lemons (2/3 cup)
- 2 tablespoons fresh mint, finely chopped
- 1 tablespoon sugar
- 2 teaspoons mustard powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon fresh ground black pepper
- 4 tablespoons olive oil
- 2 tablespoons poppy seeds
Instructions:
Whisk together the lemon juice, mint, sugar, mustard, salt and pepper. Stir in the olive oil and poppy seeds, and mix again just before serving.
Keep covered in the refrigerator for up to 4 days.
