Milk, rice and honey — and only just the littlest bit of time and attention — are almost all you need to make one of the great comfort foods, warm rice pudding. Delicious at any time of year, rice pudding is gentle on the stomach with plenty of easy-to-digest nutrition, so it is also good choice to serve to those under the weather.
Thick and plump, unwashed arborio rice has a higher starch content than ordinary rice and creates an especially rich and creamy pudding. If you don't have arborio rice, other short-grained white rices will work as well.

love rice pudding - sounds like you are gearing up for cooler weather - I always use arborio but in the UK they have pudding rice for rice pudding which I would like to try and see the difference
mm, I love rice pudding! I have it for breakfast, though I don't always make it so rich. I'm vegan, so I use either water (and slow cook the rice to release its starch), almond milk or if I want things really rich coconut milk.
I also use short grain brown rice, and it turns out really well.
That's the best looking rice pudding I've ever seen. I've got to try that one.
