Pistachio Chocolate Chunk Cookies

I'm neither gluten-intolerant nor a strict vegan, but I find that making treats or desserts without flour or dairy is not just an enjoyable and challenging departure from the kind of baking I learned growing up, but it's also deliciously rewarding. These easy chewy little pistachio cookies with dark chocolate chunks are just as tasty as any cookie you could make with flour, eggs or milk, but they don't have any of those ingredients at all. And they're loaded with protein and fiber from nuts, nut butter and sesame seeds, so you can feel good about enjoying them as well.

Easy and healthy flourless and eggless pistachio cookies with dark chocolate chunks, nuts and seeds

Preparation: 15 minutes
Cooking time: 12 to 15 minutes

Ingredients:
  • 1 cup dried unsweetened coconut flakes
  • 1/3 cup sesame seeds
  • 1/2 cup macadamia nuts or raw cashews
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons cashew butter or almond butter
  • 1 1/2 teaspoons pure vanilla extract
  • 1/3 cup unsalted pistachio nuts
  • 1/4 to 1/3 cup dark chocolate chunks
  • pinch of sea salt
Instructions:
  • Line a baking sheet with parchment paper and preheat an oven to 350°F.

  • In a food processor, pulse together the coconut flakes, sesame seeds, macadamia nuts, honey or maple syrup, cashew or almond butter and vanilla until the mixture is broken down and begins to stick together. Add the pistachios and chocolate chunks, and pulse further until the mixture is well combined.

  • With slightly damp hands, shape about 1 tablespoon of the mixture into a small round and slightly flatten. Transfer to the prepared baking sheet and repeat with the remaining mixture.

  • Bake for 12 to 15 minutes, or until the edges begin to turn golden brown. Remove the pan from the oven and let the cookies sit on the sheet to cool for about 15 minutes. Transfer to a wire rack to cool completely. Store remaining cookies in an airtight container at room temperature for up to 5 days.

Makes 12 cookies
